Descendientes de J. Palacios is the winery that changed the Bierzo conversation. Álvaro Palacios (yes, the Priorat Palacios) and his nephew Ricardo Pérez Palacios moved to Villafranca in 1999 and started recovering abandoned slate hillsides — very old Mencía vines on brutal slopes nobody wanted to work. Pétalos del Bierzo, Villa de Corullón, and the single-vineyard wines (Las Lamas, San Martín, Moncerbal, La Faraona) are global Mencía references. Small-group, serious visit.

Bierzo
Estefanía (commercial brand Tilenus) is one of the wineries that best represents "catalog-depth" Bierzo — without the cult aura of Palacios but with honest wines at reasonable prices. Tilenus Crianza is the logical entry to serious Bierzo; Tilenus Pieros and Tilenus Pagos de Posada (single-vineyard wines) are the premium tier. The visit is accessible, instructive, and doesn't require months-ahead booking.
Toro
Numanthia is the winery that internationalized Toro. Founded in 1998 by the Eguren family (from Sierra Cantabria in Rioja), acquired by LVMH in 2008, and since then part of the French luxury group's premium wine portfolio. Numanthia and Termanthia (the latter from centenarian own-rooted vines) are among the most expensive and internationally sought Toro wines. Premium small-group visit — through old own-rooted vineyards (some 120+ years old), winery, and a vertical tasting.
Rías Baixas
Pazo Señorans was one of the wineries that elevated Albariño's reputation in the 1990s, thanks to the work of Marisol Bueno and Javier Mareque. The pazo (Galician manor house) dates from the 16th century, with the winery occupying part of the original structures plus a modern facility. Selección de Añada — their top wine, an Albariño aged on lees for years before release — was the wine that founded the "gastronomic Albariño" school. Small-group, very informative visits.
